Pectin handling process

Pectin can be extracted from apples, sugar beets and other crops. But most pectin comes from citrus peels. The peel from which pectin is extracted is purchased from a citrus processor. These are mainly produced in Argentina, Mexico, but also Brazil, Peru, Spain, etc. After juicing, the processors wash the peels to remove oil and dissolved sugar. After drying slightly, these are packaged and sent to the pectin production line.
